Meatballs in tomato sauce

Meatballs in tomato sauce

If you're like me, you'll look at this and think it must be bland but I don't "do" bland food so give it a go and see. Completely syn free too. Adapted from the Hairy Bikers diet cook book to make it even more healthy.

Total Time 30 minutes
Servings 2 people

Ingredients

  • 1 Bag Slimming World Frozen meatballs (available from Iceland)
  • 400 g Tin chopped tomatoes
  • 8 cherry tomatoes
  • 1 Large onion chopped
  • 2 cloves Garlic crushed
  • 300 ml cold water
  • few squirts frylight

Instructions

  • Although the instructions on the bag say cook from frozen, I defrosted mine first. If you do cook from frozen, you'll need to make sure they are thoroughly cooked through. Tip the meatballs into a hot frying pan with a few squirts of frylite
  • When they've browned, remove and set to one side.
  • Then, with a little more frylight, add the chopped onion and stir to start to brown them too. After a couple of minutes, add the crushed garlic and continue to stir.
  • After another minute, add the tin of chopped tomatoes, the meatballs and the water and give a good stir. Turn down the heat, cover with a lid and allow the meatballs to cook in the sauce.
  • After 10-15 minutes, season the sauce really well. I like lots of ground black pepper or you could add some chilli if you wanted something more fiery. Add the cherry tomatoes and cook for another few minutes until everything is fully cooked but before the tomatoes fall apart. Check the seasoning and serve with pasta and a final crack of black pepper
