Strawberry and Vanilla Mousse

A lovely, fresh sweet mousse originally published in the Slimming World Magazine July 2024

Equipment

  • 1 Food Processor
  • 1 Sieve

Ingredients

  • 400 g Strawberries Hulled
  • 1 level tbsp Granulated Sweetener
  • Half 11.5g Sugar free strawberry jelly crystals
  • 2 tsp Vanilla Extract
  • 1 115g pots Muller Light Strawberry Greek Yoghurt
  • 2 med Egg Whites

Instructions

  • Get all your ingredients and equipment together first.
  • Blitz half od the hulled strawberries and the sweetener in a food processor then sieve into a small saucepan. Sprinkle over the jelly crystals and stir and heat until all dissolved.
    400 g Strawberries, 1 level tbsp Granulated Sweetener, Half 11.5g Sugar free strawberry jelly crystals
  • Allow to cool then stir in the vanilla and yoghurt
    2 tsp Vanilla Extract, 1 115g pots Muller Light Strawberry Greek Yoghurt
  • Whisk the egg whites to a stiff peak in a clean bowl. Add 1 tablespoon to the strawberry mixture to loosen it and then carefully fold in the remaining egg whites. Be careful not to lose all the whipped-in air from the eggs.
    Then, carefully por the mixture into 4 glasses or ramekins and cool in the fridge for 4 hours or more
    2 med Egg Whites
  • Finally, once set, add the remaining strawberries (chopped) to the top of the mousse as decoration
