I got this idea from a recipe in a “Hello Fresh” box and really enjoyed them so here’s my version.

They are lower in carbs than potatoes so a great choice for an occasional treat

Instructions
  1. Take one celeriac root or as many as you need for enough chips and some olive oil. Pre-heat the oven to 180 degrees C
  2. Peel the celeriac, I find it much easier to use a knife to chop the skin off, especially the "rooty" base
  3. Cut into the size of chips you would like. Thick ones need longer cooking so make them all similar in thickness
  4. Splash the oil on the chips and shake so they are all covered then tip onto a baking tray
  5. Bake in the oven for 30-45 minutes until starting to brown
